My Favorite Banana Bread

Hello Everyone! This week as I was making banana bread, I thought it would be fun to share the experience with all of you! This recipe is used quite frequently for me because I always have bananas on hand. I also love it because it always turns out great. I have never had any problems with it.

I got the recipe for this banana bread from my mom and she always used the Lion House Cookbook. So although I wish I could take credit for this amazing recipe, its all because of the Lion House!


Without further ado, lets get right into it!

Here's the setup I'm working with. I decided to use a Bosch Mixer but I've used my hand mixer or KitchenAid in the past. So use what you have and it will be great!


Lets start off with the recipe and then we'll get right into it!





Here's the process of the bread from start to oven.


Step 1: Cream butter, sugar & egg. You'll want your butter to be completely softened, otherwise it won't mix well.

Step 2: Add Bananas, Milk & Lemon Juice. Some of my bananas were browner than others which is fine. Although it looks weird at this stage it will still be so yummy!

Step 3: Add Dry ingredients (flour, baking powder, baking soda & salt) and mix.

Step 4: Scrape the edges of your bowl and make sure everything is mixed.

Step 5: Grease pans, divide batter and bake.


This recipe always comes together very quickly for me, but while I'm making it, I usually double it. One recipe will make one loaf of banana bread. This time I went crazy and made 4 loaves because I had lots of brown bananas. Another perk of this recipe is that it freezes great! I love to stick it in the freezer and eat it in a couple weeks.


After sticking the bread in the oven, its time to wait. While my bread cooks for an hour, I like to get all the dishes done and the kitchen cleaned up. That way I can enjoy my yummy banana bread when its done!


When the bread comes out of the oven, I like to let it cool in the loaf pan for a minute and then ill dump it out onto a wire cooling rack. Although the bread smells so yummy, I usually try and let it cool for at least 15-20 minutes. This allows the bread to set up a little and not fall apart upon slicing.


After patiently waiting, the bread is ready to consume. And let me tell you, everyone will want a piece, or two or three. The reason I make more than one loaf is because the first one will disappear in 10 minutes and then you have more for later.
