Well hello and welcome back! Have you found yourself in a dinner rut? Don't know what to make anymore? Well then you're in the right place! Today I'm sharing one of my favorite easy dinner ideas.
This recipe is an old family favorite and we love it because it is a recipe from a good friend! I hope you enjoy it as much as we do! Lets get right into it.
Here's what you'll need:
A bonus about this recipe is that usually I have most of the ingredients on hand.
Without further ado, lets make it happen!
So to start, you will want to cook your chicken. I decided to boil mine because its quick and easy. But you can bake it or use a rotisserie chicken. Whatever you have on hand and works best for you! I boiled mine for about 15ish minutes. Then I took it out of the water to cool for a minute.
Next, you'll want to shred your chicken. You can do this by hand or with a stand mixer. Recently I learned that you can shred your chicken in the mixer and its so quick and easy. If you can, I recommend doing that. If not, the good old fashioned fork way will work too. If you do it by hand, it would be wise to let your chicken cool to ensure safety and not burn yourself.
Now, its sauce time. I love sauce time because I love SAUCE! I am a sauce girl through and through. First you'll add your 2 cans of cream of chicken soup. Then you'll add milk, if you saved your cans, you can measure your milk in one of them, if not just do about 1 1/2 cups of milk. Stir this mixture for a minute and then add your Italian Seasoning mix. Stir until everything is mixed and well incorporated. I love this silicone whisk for this! It makes it so I can get everything combined without worrying about scratching my pans.
After you get all your sauce combined and smooth, add 8 oz. cream cheese. This is the best part because it gets nice and creamy! I would recommend slicing your cream cheese before putting in because it will make it faster to melt and less clumpy. Stir often to ensure a nice smooth and creamy sauce.
Now its chicken time! Add your shredded chicken slowly and stir throughout addition. At this point you want all the chicken to be incorporated and coated.
After adding shredded chicken, you'll just want to make sure everything is combined.I like to go around the edges of my pan just to make sure I get everything. After everything is combined, you are done! Wasn't that easy?
This chicken recipe goes great over rice. I usually get my instant rice cooking at step 4 and that will ensure enough time to cook. I also decided to pair mine with some green beans and a roll! Yum Yum!
I hope you enjoy this recipe as much as I do! Thanks for stopping by and as always,
Remember to keep making happiness.
xoxo
