Hello and Welcome Back everyone! I hope you are all doing well. I wanted to share some fun trifle recipes this week. I had fun making these during quarantine! The fun thing about trifles is that you can make them with so many different things. The options are endless!
The 3 trifles I want to share with you are:
Lemon Raspberry
Triple Chocolate
and Key Lime
Something that is common in all of these are WHIPPED CREAM! I love homemade whipped cream. It is so worth it! So before I share I trifle recipes, Im going to share the quick run down on the whipped cream!
Heres what I use in my whipped cream:
2 Cups Heavy Whipping Cream
1/2 Cup Granulated Sugar
1 Teaspoon Vanilla
Put all ingredients in bowl and start mixing. Keep mixing until peaks form. I usually find somewhat stiff peaks! And just like that, you're done!
Now as a preface for all the recipes, I only made 2 trifles. That is all that I needed, so adapt the recipe as needed for personal use! They would also be fun in a big trifle dish. I just wanted mini ones today! But you do you!
Let's Start with the Lemon Raspberry trifle!
For this recipe I used:
Lemon Pie Filling ( I added extra lemon juice to make it more tart )
Angel Food Cake ( I cubed this prior to making, keep in mind you'll want it small enough to fit several pieces in your trifle dish)
Heavy Whipping Cream
Fresh Raspberries
Lemon Wedges
The first thing I did for this recipe is make the whipped cream. After completely set, I removed 1/3 from the bowl.
Now things get fancy. Take about 1 cup of fresh raspberries, add a spoonful of sugar, and 2 tablespoons heavy whipping cream. It is puree time. Blend these for just a couple seconds. You will then add the raspberry mixture to your bowl with 1/3 of the cream mix. I just folded this mixture together softly, that way the raspberries don't get too smashed. Now you have a raspberry cream mixture that we will use in our layering process.
That is all the prep work needed for this trifle. Now we layer. Here is the order I layered the trifle.
I started with raspberry cream on bottom. Then add Angel Food Cake
Then Lemon Pie Filling Mixture
Next add Angel Food Cake
Do an outer border of Raspberry Cream
Fill the inner circle with lemon pie filling
Do a dollop of Regular Whipped Cream
Garnish with some raspberries and a lemon wedge.
TA-DAH! Here is the final product!
The second Trifle in the line-up is Triple Chocolate! Heres is what you'll need:
For this recipe I used:
Brownie Bites (sliced smaller for easy layering)
Vanilla
Milk Chocolate Chips (or baking chocolate, whatever you have)
Milk Chocolate Bars
Granulated Sugar
This recipe goes together fairly quickly because you already have the whipped cream made. With that in mind, it still takes some time because of the chocolate mousse!
So to start, well make the yummy & easy chocolate mousse!
Here's the ingredients needed:
1/2 Cup Heavy Whipping Cream
3 Oz Milk Chocolate Chips
1.5 Tablespoons Heavy Whipping Cream
1/2 teaspoon Vanilla
First we'll melt our chocolate down. I did this by putting it in a microwave safe bowl with 1.5 Tablespoons cream. Put in the microwave in 30 second increments, stir every 30 seconds. Mine took about 30 seconds to melt. After that is combined, You will add the chocolate to mixing bowl with 1/2 cup of cream. Mix until firm peaks form. Chill until set. I let mine sit for 30-45 minutes!
Now its go time!
Heres the layering order I used (starting at the bottom):
Chocolate Mousse
Brownie Bites Layer
Whipped Cream
Brownie Bites
Dallop of Chocolate Mousse
Garnish with Chocolate Shavings (from the chocolate bar)
ENJOY!
Now for the last trifle.... Key Lime! This trifle has me so excited for summer. Bring on sunshine, sandals, watermelon... you name it, I'm excited!
Here's what you'll need for this trifle:
Whipped Topping (cool whip or store brand works great)
Angel Food Cake (cubed prior to assembly)
Heavy Whipping Cream
Sweetened Condensed Milk
Limes
Frozen Limeade Concentrate
Green Food Coloring
Graham Crackers (for garnish)
To start, we will make the key lime layer. This entails:
1/2 can of frozen limeade (mine was thawed and worked fine too!)
1/2 can of sweetened condensed milk
1/2 container of whipped topping
Few drops green food coloring
Mix all together (as good as you can) and stick back in the freezer for 20-30 minutes (if your limeade was thawed, like mine)
Now its layering time.
Layers are as follows (starting at the bottom):
Key lime mixture
Angel Food Cake
Whipped Cream
Key lime mixture
Dollop of whipped cream
Graham cracker crumbs and lime for garnish
These are such a fun refreshing treat! Enjoy!
Hope you enjoy these treats as much as I have! And as always: Remember to keep making happiness!
XOXO,
